Classic Hamburgers

INGREDIENTS:
1 lb. lean ground beef
4 drops Worcestershire sauce
1 tsp. crushed oregano
Salt and pepper to taste
6 hamburger buns, split
 
 1. In a large bowl, combine the beef, Worcestershire, oregano, salt and pepper. Mix well and form the meat into 6 patties. When the coals are hot and evenly distributed, place the burgers in the center of the grill and set the buns, open-face down, to the outside edge. As soon as the buns are toasted, flip the burgers and place a bun top on each. This will help the meat cook through while the bread soaks up juices. Serves 6. Set out with your favorite condiments.

 

Tuna Burgers

INGREDIENTS:
2 cans tuna in oil
1 tbsp. minced dill
1 tsp. capers, rinsed and chopped
Salt and pepper to taste
1 1/2 tbsp. olive oil
 
 1. Drain oil from tuna. Using a fork, gently blend it with dill, capers, salt and pepper in a mixing bowl. Shape into 4 patties.

 2. Heat oil in a large skillet over medium heat. Add patties and cook until golden brown, about 2 minutes on each side. Makes 4 servings.

 

 

Grilled veggies

Fresh vegetables (choose any or all of the following:

red onion
eggplant
whole ears of corn, husked and cleaned
green or red bell peppers, cut lengthwise in 1-inch strips
zucchini or summer squash, cut lengthwise into quarters
Portobello or other mushrooms, sliced thickly
small to medium-sized eggplants, cut into 1/2-inch rounds

good-quality olive oil
salt and freshly-ground pepper to taste

1. Brush the prepared vegetables with olive oil and place in a single layer on the grill-rack over medium-high heat.

2. Cook, turning as needed, until crisp-tender and flecked with char. Remove vegetables as they reach the desired state of doneness (eggplant will take the longest to cook).

3. Sprinkle with salt and pepper to taste.

 Easy Fruit Salad

(#2) can pineapple
1 can mandarin oranges
2 bananas
1 c. miniature marshmallows
1 pkg. Dream Whip or Cool Whip
Nuts; optional
 

Drain juice from all and mix

Fresh Fruit Salad

2 cups cubed cantalope

2 cups cubed honey dew

2 cups cubed watermelon

2 cups purple seedless grapes

2 cups sliced strawberries

Mix all together and Chill

Serve with Cool Whip

 

 

Dripless popsicles

1 package fruit flavored Jell-o
1 package kool-aid
2/3 cup hot water
2 cups cold water
1 cup sugar

In a large pouring pitcher mix together: Jell-o, Kool-Aid, sugar and hot water, until dissolved. Then add cold water. Pour into molds and freeze. Will not drip!  If you do not have any molds, get creative.  Try using any small container that is shaped similiar to  a popsicle.  I like yogurt cups or snack fruit cups!  Below you will find more popsicle recipes!

 

Creamsicles

1 (6 oz) can peaches in light syrup or
2 fresh ripe peaches, sliced and pitted
1 cup heavy cream
1 tsp sugar or honey (optional)
Popsicle sticks and cups

Whip cream in a blender for 30-45 seconds. Add peaches and honey. Whir until smooth. Pour into molds, insert sticks and freeze.

 

Watermelon pops

1 cup seedless watermelon chunks
1 cup orange juice
1 cup water
Popsicle sticks and cups

Blend these ingredients into a blender, pour into molds, insert sticks, and freeze
